About baked hake

Things to keep in mind

Something we absolutely do not want is to consume spoiled fish that could lead to food poisoning, so we must take extreme precautions when its freshness

We're going to pay close attention to our senses to determine certain characteristics of the fish that will allow us to know if it has lost its quality for consumption.

Whether we find fresh or frozen hake … let's pay close attention to the following:

  • The gut . This area is the first to deteriorate with aging; when in poor condition, it becomes swollen , flaccid, and sunken .
  • The smell . Spoiled fish has a foul , rancid , and sometimes ammonia-like odor.
  • The eyes . In poor condition, they have sunken eyes , a milky cornea, and a gray pupil, as if they had a cataract. (You're going to dream about this now.)
  • The gills. They are located behind the head and, when in poor condition, are yellowish or gray.
  • The skin. A fish in poor condition has very soft skin , and the scales and flesh come off easily.

On the other hand, to determine if a fish is in good condition we will take into account these factors:

  • Fresh fish smells of seaweed, the sea, all of that. The skin of fresh fish is brightly colored, the scales are hard and shiny. It has protruding eyes with shiny, black pupils. The gills, in good condition depending on the species, are pink or red, clean, shiny, and free of mucus, and the flesh is firm and not slippery. This will ensure it's fresh.
  • You can also buy frozen meat, keeping in mind that refreezing it is never recommended.
  • It's best to let the hake thaw slowly in the refrigerator for a while. This way, when it's time to cook it, it will be as if it were fresh hake, and you'll follow the cooking times indicated in the recipe.

Now all you have to do is follow these simple steps. It's easy, and you'll have a healthy and delicious dish to share with anyone!
