Minestrone soup recipe

Yield : 6 portions

Preparation time : 45 minutes

Ingredients

  • 2 tablespoons of olive oil
  • 1 onion, chopped
  • 2 garlic cloves, chopped
  • 2 carrots, peeled and fine slices
  • 2 celery stems, fine slices
  • 1 green pepper, in cubes
  • 1 red pepper, in cubes
  • 1 zucchini, in cubes
  • 1 cup of green beans, cut into pieces
  • 400 gr of crushed tomatoes
  • 1 cup of pasta (small noodles or macaroni)
  • 400 gr of beans, drained and rinsed
  • 1 liter of vegetable broth
  • 1 teaspoon of dry oregano
  • 1 teaspoon of dry basil
  • Salt and pepper to taste
  • Grated Parmesan cheese to serve
  • Fresh basil or parsley leaves to decorate 

Procedure to do the minutetrone soup

  1. Set in olive oil onion and garlic in a large pot over medium heat until the onion is translucent.
  2. Add carrots, celery, peppers, zucchini and green beans and cook 5-7 minutes, occasionally stirring.
  3. Incorporate crushed tomatoes, chickpeas and dry herbs. Cook for a few more minutes.
  4. Pour the vegetable broth into the pot and bring the mixture to a boil. Reduce the heat and let over 15-20 minutes.
  5. Add the pasta and cook about 8-10 minutes until it is ready. Salpimentar at ease.
