Hello everyone! Welcome to this space we created to share with you vegetable tray .

any Argentine grocery store these days . They're supposed to be for soup, but here we're going to prove that they can actually make at least eight different recipes .

These are very simple and basic vegetable recipes, perfect for a main meal or dinner, or to accompany any other meal. I'll make it easier for you by sharing that Paulina made a video entirely dedicated to the vegetable tray.

On the vegetable tray

The typical vegetable tray prepared at the grocery store usually contains ingredients such as spring onion, celery, corn, chard, zucchini, leek, pumpkin, carrot , and other ingredients that may vary. Of course, for this recipe, you can choose and prepare any vegetables you like best.

It's a very economical and quick option that we can always count on to get us out of a tight spot or simply to enjoy how delicious they are.

Option #1: Sauteed Vegetables

Ingredients

  • ½ tray of vegetables
  • Oil
  • Soy sauce
  • Sugar (a pinch)
  • Sesame seeds (optional)

Step by step

  1. Heat oil in a frying pan over high heat.
  2. Add half of the tray of vegetables. Cook without stirring; do not add salt or water.
  3. When they begin to brown, stir a little and place the lid on.
  4. Remove the lid after 1–2 min, add soy and a pinch of sugar, mix well.
  5. Serve with sesame seeds on top.
Sauteed vegetables

Option #2: Vegetable pie

Ingredients

  • 1 full tray
  • Oil
  • Salt and pepper
  • Splash of water (optional)
  • 2 eggs
  • 1 tbsp cream cheese
  • 1 tbsp mayonnaise
  • Pie dough (prepared or store-bought)
  • Seeds or toppings (sesame, sunflower, chia), optional

Step by step

  1. Sauté the vegetables from the pan in oil (cut the corn kernels separately), season with salt and pepper, and add a little water if necessary.
  2. Cover and cook for 10–15 min.
  3. Turn off the heat and mash a little with a fork (do not make a puree).
  4. In another bowl, mix the eggs, cream cheese, and mayonnaise. Combine with vegetables.
  5. Place the dough in the mold, pour the filling over it, close the pie with a pleat on top, and decorate (with seeds or cheese).
  6. Bake at 180°C for 20–30 min until golden brown.

Vegetable cake

Option #3: Vegetable Crumble

Ingredients

  • 1 tray of vegetables
  • Oil, salt
  • 2 tbsp all-purpose flour
  • 1 tbsp whole wheat flour
  • 2 tbsp oats
  • 1 tbsp polenta
  • Handful of mixed nuts
  • 1 tbsp cold butter

Step by step

  1. Sauté vegetables with oil, add salt and cover until cooked.
  2. In another bowl, mix the crumble ingredients: flour, oats, polenta, and the nut mix with butter. Mix well until you get a sandy texture and refrigerate.
  3. Place vegetables in a baking dish and sprinkle cold crumble on top.
  4. Bake until golden.

Option #4: Vegetable soup

Ingredients

  • 1 tray of vegetables
  • Oil
  • Water or broth
  • Curry
  • Mustard
  • Olive oil (to finish)

Step by step

  1. Sauté the vegetables in oil for a few minutes until cooked, adding a little water if necessary, but do not boil.
  2. Brown, then add liquid (water or broth). Season with curry powder and mustard. Cook until tender.
  3. Blend everything together until creamy.
  4. Serve with a drizzle of olive oil on top.
Cream of vegetable soup

Option #5: Gratin vegetables

Ingredients

  • 1 tray
  • Oil, salt, pepper, nutmeg
  • 1 cda butter
  • 1 tbsp flour
  • 1 cup milk
  • Grated cheese

Step by step

  1. Sauté vegetables with oil and a pinch of salt.
  2. Add butter, let it melt; add flour and cook, stirring, until the flour is toasted.
  3. Add milk and thicken, season with salt and pepper, and nutmeg. Continue stirring until well thickened.
  4. Place cheese on top and bake in the oven until golden brown.

Seriously, it's amazing how delicious this dish is!!

Gratin vegetables

Option #6: Roasted Vegetables

Ingredients

  • 1 tray
  • Oil
  • Salt, garlic powder, polenta

Steps

  1. In a roasting pan, place the vegetables with oil, salt, garlic, and polenta. Mix well to coat the polenta with the vegetables.
  2. Spread over the dish and bake at 220°C for 25 to 35 minutes, or until the vegetables are golden brown and crispy.

Option #7: Vegetable omelet

Ingredients

  • 1 tray of vegetables
  • Oil
  • 1 egg + splash of milk
  • Salt

Steps

  1. Sauté vegetables until golden brown, set aside and let cool.
  2. Beat egg with milk and salt.
  3. Mix with cold vegetables.
  4. Cook in a pan in oil, taking care to avoid spills. Cook, turning, for 5-7 minutes on each side.

Option #8: Puddings

Ingredients

  • 1 tray of vegetables
  • Oil
  • 1 egg
  • 1 tbsp flour
  • Grated cheese
  • Muffin tins
  • Water for a double boiler

Steps

  1. Cooking vegetables in a pan.
  2. Mash with a fork and mix.
  3. Beat egg with flour until smooth, add grated cheese and vegetables.
  4. Place in baking tins and arrange them on a dish with water in the base (bain-marie).
  5. Bake at 180°C for 15 min.
