It is a typical dish of the Region of Murcia, south of Spain, which we can also call, Arriero Ajo , or simply potatoes with cod , or potatoes with cod.   1. Ingredient selection: Choosing quality potatoes and fresh or previously desalted cod guarantees a good flavor to the dish.
  2. Cooking time: Popes are cooked with skin, until they are tender but not undone. In this way, proper texture is guaranteed in the final dish.
  3. DESICATED OF THE COD: If you choose to use salty cod, it is very important to get it out before using it in the recipe to avoid excess salt. To do so, you must put the cod in a container with cold water for 24 or 48 hours, changing the water every 6 hours.

Murcian cloud recipe

Yields: 4 portions

Preparation time: 40 minutes

Ingredients

  • 500 g of potatoes
  • 300 g of desalted cod
  • 100 ml of olive oil 
  • 4 garlic cloves
  • 1 teaspoon of paprika
  • Salt and pepper to taste
  • 4 hard eggs
  • Parsley to decorate

How to do stars step by step

  1. Cook the potatoes in salt water until they are tender. Drain and wait a little for them to cool before peeling them. Reserve. 
  2. In a pan with olive oil add chopped garlic and cook until golden brown. Incorporate the cod into the pan and cook for a few minutes until it integrates with garlic.
  3. In a bowl, mix the cooked potatoes with the content of the pan. Crush everything slightly to combine flavors. Condiment with paprika, salt and pepper. 
  4. Decorate with chopped parsley and the hard eggs cut in the rooms above. Accompany with bread or toast. Enjoy!
