Ladies and gentlemen, I present to you a delicious and very original rice with lemon squid ! This creamy rice with squid and lemon is a must-try. It's like a risotto , since the recipe uses white wine, and the result is a creamy rice, hence the name "creamy." It also has a few seasonings that give it a special color and flavor, mainly thyme.

It's an easy recipe, and to break away from the everyday and change up the squid and rice , I recommend you try it at home!

Ingredients

For 2 portions

  • Tentacles of 2 squids
  • 1 lemon zest
  • Half -lemon juice
  • 2 garlic cloves
  • 1/2 onion
  • 1 small piece of green bell pepper (optional)
  • 1 small cup of double rice (or bomba rice)
  • 3 glasses of broth (fish broth, if possible)
  • 1 jet of white wine
  • Thyme
  • Chopped parsley
  • Salt, pepper and olive oil

How to make rice with squid

step by step

  1. Chop the onion and slice the garlic. Sauté them in a drizzle of olive oil until the onion is translucent. Add the finely chopped green bell pepper, if you used it.
  2. Add the squid tentacles, chopped into very small pieces (approximately 1 centimeter) and cook until they look whiter.
  3. Add the splash of wine and stir over high heat until it reduces and the alcohol smell stops coming out.
  4. Add the rice without liquid and cook, stirring, until it looks transparent and shiny.
  5. Add the lemon zest, thyme, salt, and pepper, and stir. Add a little thyme because we don't want it to dominate, just a pinch.
  6. Add the broth all at once and stir a few times. Cook covered for about 4-5 minutes, until it begins to boil. Uncover and cook uncovered.
  7. Stir occasionally. The idea is to ensure it's fairly liquid and creamy. Keep tasting until the rice is cooked and al dente. When it's done, drizzle with the juice of half a lemon and add plenty of chopped parsley.
  8. Stir vigorously (what a lovely word, vigorously) until it becomes smooth. Serve and eat immediately.
