  • 200 g. of sugar
  • 200 g. milk cream
  • 800 g. of ricota

A delight without oven!

  1. Process the entire ricota with a mixer or processor for 5 or 6 minutes. The ricota must be totally smooth and much more creamy.
  2. Add the previously melted sugar and chocolate and process again for 5 more minutes. If you want you can do it in several batches so as not to reheat the processor, but it is important to process several minutes. You will see that a kind of chocolate cream is formed with a smooth and very bright texture, they will not be able to believe that it is ricota.
  3. Beat the cream in a large container until it is semi-fatida. We do not want to mount it at all since it can be cut, so just a little.
  4. Incorporate the ricota with chocolate into the cream container while we make enveloping movements with a spatula. In the event that they do not want to put cream you can replace the cream with more ricota, I put it because it seems to me that it gives it a different and very rich softness!
  5.  With a piece of butter paper we cover the entire surface of a mold that can be unmold (as they see in the video) to prevent chocolate cheesecake from sticking to the bottom.
  6. Place a layer of cookies split in small pieces. I used well -crispy chocolate cookies, you can use the cookies you like best. They can even change the taste, I also recommend vanilla that will look very good with chocolate. It is important to cover the entire surface, and we do not need cookies to be made dust, simply broken.
  7. Add on the basis of cookies half of our chocolate cream. Accommodate with a spatula to be smooth and add another layer of cookies in pieces.
  8. Finally we add the rest of the chocolate cream on top. Take the refrigerator at least 4 hours, I like to do it for the next day that is much firmer.
  9. By removing it from the refrigerator we unmold it very carefully so that it does not disarm. By serving it with melted chocolate.
