We continue to make recipes at the request of the public. A long time ago they have been requesting in the different networks a recipe of integral muffins (or magdalent Marta, it is the same).

I tell you that these muffins are also without sugar, so in addition to being suitable for diabetics they are much healthier and more healthy for anyone who wants to take care of themselves.

In addition, this recipe does not wear butter like most of the muzzle recipes (or any type of cake), but we are going to use oil that is also much healthier. If they respect the proportions of integral flour and common flour, they will be perfect, very fluffy and tasty.

I love to eat these muffins with jam (here you can see a sugar -free jam recipe that I published a while ago) and the high ones to my breakfasts or the snacks.

We continue with the good ones: I like to prepare these muffins with bananas that are a bit past, softer than normal since we are going to step on them with a fork. Then I think it is a good recipe so that not spoiling the fruit: when we see some past bananas come out some spectacular integral muffins!

Integral muffins recipe

Ingredients

For 1 dozen muffins

  • 2 very mature bananas
  • 3/4 Mugs of comprehensive flour
  • 1/2 cup of flour 0000
  • 1 egg
  • 1 cdita. baking powder
  • 1 cdita. of cinnamon
  • 1/3 cup of oil.
  • 2/3 envelopes of Stevia

Another Paulina recipe that has no sugar but does not show

  1. Peel the bananas and step on a plate with a fork. As I said above, it is best to use well mature bananas to make this step easier.
  2. When the banana is fully tied we are going to run it next to the plate or container where we step on it, add an egg and beat it.
  3. Add the stevia to the egg and mix everything until you integrate with the banana. As I always say the amount of Stevia depends on how sweets they are. To these integral muffins I put 3 envelopes, if you want sweeter they can add one more.
  4. At the end of integrating everything we add the integral flour while mixing with a fork.
  5. When it is totally united we add the common flour and the baking powder and continue mixing with the fork until integrating. I do it with a fork because an unmanageable bodoque is formed with a machine, pay attention to me that they will succeed.
  6. Once it is more or less united, we incorporate the oil (it can be any neutral oil: sunflower or corn. We mix again very well.
  7. Add cinnamon, and if they have ginger put a little that will be incredible. I did not put him because I did not have at home, but these integral muffins are delicious combined with ginger.
  8. When they have a kind of quite compact ball that is separated from the edges of the plate we will place it in pyrotines for muffins. Eye, this mass is different from the traditional masses of muffins, biscuits or Budines. You will see that it is a more liquid mass, but this is the secret for integral muffins to be spongy and very tender. We distribute them in the pyrotines leaving a margin of a few centimeters since they will be enlarged. An important tip: Don't crush! As the dough falls with the spoon, so it should be.
  9. Bake at 180º for 40 minutes or until they see well golden muffins.
