Here's Paulina. Hello friends. Hello, hello Martians. Can you believe a more wonderful cheesecake recipe than this? I love it, not only because it's so easy to make, but because it's so, SO delicious. You have no idea, it's delicious.

Cheesecake, no oven, no gelatin, with simple ingredients... and on top of that... it can be turned into an ice cream cake! What more could we ask for?

Several things: the cookies can be whatever you like best. I like them filled and put them in whole. The minimum time in the fridge is two hours, but you'll find that if you leave it longer, it takes on a better consistency. And then, to eat it as an ice cream cake instead of a cheesecake, freeze it and take it out a little while beforehand, like any ice cream. The rest is all in the recipe.

The quantities I give you are for a small cheesecake. If you want it bigger, double the quantities, and if you want it taller, double the filling. I like it exactly like this: 1 inch of base and 3 inches of filling.

Ingredients

for 1 small cheesecake

  • 20-25 chocolate cookies
  • 2 tbsp. of butter
  • 100 g of cream cheese
  • 3 tbsp. powdered sugar
  • 1/2 Cdita. vanilla essence
  • 250g. milk cream

No-bake cheesecake recipe

Easy

  1. Grind about 10-12 chocolate cookies, filling and all. I did this in the mixer's beater attachment (aka the cuchuflo), but you can also do it in a food processor or with a mortar and pestle. Mix them with the melted butter until you get a paste. Line a mold with this paste, pressing it down. You'll end up with a base about 1 cm thick. Refrigerate until ready to use.
  2. Beat the cream until stiff, without sugar.
  3. Beat the cream cheese with the powdered sugar and vanilla extract until well combined. You'll see how super creamy the cheese is.
  4. Combine the cheese with the cream and add about 8 chopped cookies, not ground anymore, this time a little coarser, which is how I like this cheesecake recipe.
  5. Place this mixture on the cookie base and place in the oven... uh, I scared you, no, this is a no-bake cheesecake recipe, it goes straight into the fridge for at least 2 hours. Longer is better.
  6. (Well... this doesn't count as a step) Unmold and decorate as desired. I added more ground cookies and a strawberry. By the way, don't be selfish and pass along this great recipe. Also, send me a shout:

I'm going to make it tomorrow and I got a great idea... put dulce de leche on it, I'm thinking of putting diluted red fruit jam on top and a little bit of gelatin, I make it without sugar, I add stevia, my husband is diabetic, ????
