I'll tell you one thing: I'm not nostalgic. And I find the '80s pretty shitty. I don't give a damn about the orange. It was horrible.

And retro... guys, retro is BAD by definition. I mean, if it were good, it would be classic. Were the Beatles ever 'retro'? Is hide-and-seek a retro game? Is The Pink Panther retro? No, they're all classic and great.

 "Let's Go to the Beach" is retro because it's a piece of crap we had fun with for a couple of summers. The Game of Life because the second time we played it, we abandoned it after half an hour (it takes too long to become a millionaire) and left the bills outside to pretend we were buying other things. Arnold and Willys are retro because today you can't even sit through the introduction. And if you get past the introduction, all you can think about is that Kimberly ended up a suicidal porn actress, Willys killed a guy, and Arnold smoked his entire fortune and ended up working as a security guard at a video store. Yeah. Rock and roll. Go for it, True Hollywood Story.

The definition of retro includes low quality. It's a fondness for something that didn't last because it was a piece of shit. But it still reminds us of a happy moment. Because something retro is happy. Nazism is so retro = It doesn't work.

 Where was I? Ah, yes: asparagus, asparagus, they're served on the table. Asparagus, asparagus, they enhance your beauty.

If I have to remember one thing from '80s TV, it's the alien series. Three: V, of course, and V: Alien Invasion. Give me a piece of paper and I'll make you the little spaceship. I can still do it. Galactica, the one where kids took a giant leap to climb a tree. It's still my most coveted superpower (albeit for more urban purposes: I want to cross the street without waiting for the light). And Alf, whose song I still remember every time I buy or cook asparagus.

About this asparagus salad

Believe it or not, this asparagus salad is one of the dishes I remember most from last summer. It's so, so, so delicious.

This asparagus salad has the crunch of walnuts, the intensity of sun-dried tomatoes, the fibrous texture of asparagus (which I love), and cheese as the common thread running through all the ingredients.

It's actually an adaptation of this asparagus salad from El Comidista. And when I say adaptation, I mean adaptation to what I had in the fridge, obviously.

I highly recommend them, ideal to accompany something simple like grilled chicken steaks.

Ingredients

for 1 large salad

  • 1 Rúcula tied
  • 8 asparagus
  • 5 hydrated sun-dried tomatoes
  • 6-8 chopped walnuts
  • 1 garlic clove
  • 1 stalk of spring onion
  • 1/2 cup chopped parsley
  • 1 tbsp grated Parmesan cheese (or other hard cheese)
  • Salt, pepper, olive oil and balsamic vinegar

Asparagus salad recipe

  1. Wash the arugula and place it in a salad bowl.
  2. Blanch the asparagus as I show you in this video . Separate the tips from the stems. Leave the tips as is, and cut the stems into approximately 1/2 cm slices.
  3. Cut the green onion stem into thin slices.
  4. Chop the garlic and parsley. Also chop the soaked sundried tomatoes (I soak them in a little balsamic vinegar) into fairly small pieces.
  5. Place all the ingredients on top of the arugula and season with salt, pepper, balsamic vinegar, and olive oil.
  6. Finally, sprinkle with grated Parmesan cheese and chopped walnuts. And now, eat the asparagus salad. You're going to love it.

Just today (today!!!) I made asparagus with tartar sauce to accompany chicken milanesas. Delicious! I love asparagus. I'll take the idea you left on FB about freezing them. Bs.
