Welcome to Paulina Cocina! Today I have a sugar-free recipe that's become one of my favorites: sugar-free pancakes! I know it sounds very '90s American sitcom breakfast to say "Pancakes . "Oh, Mary Jay, eat your pancakes or you won't be going to prom with Jason .
How easy it was to make television in the 90s: a couple of hackneyed characters around a kitchen table, and that's it. The dysfunctional mother or father trying to make ends meet with a big American breakfast.
The most stereotypical children: the cool one, the rebel, the nerd. In short, if there's one thing foreign television from that era left us with, it's a great curiosity about some food products from other cultures. For example, peanut butter , ham sandwiches (they were sandwiches!), mantecados, milkshakes, and pancakes.

If we think about where the word comes from, "pan" in English means "pancake," and "cake ." So, without further ado, these are pancakes. Don't go telling them they're thick pancakes, they'll get self-conscious. They're a little fluffier than pancakes , so we can make them a little taller.
This time we made them sugar-free because they're a great breakfast option if you're watching your diet or if you have to follow a sugar-free diet for some reason. If you don't need to, you can make them with regular sugar or brown sugar, which gives them an extra flavor. You can decorate them with fake powdered sugar (I'll leave the recipe here) and sugar-free jam.
You can also leave the mixture ready the night before and make them when you wake up. I don't recommend storing them once they're cooked because they can become soggy and lose their consistency.

For a good batch
- 1 egg
- 1 pinch of salt
- 3 tbsp. integral flour
- 3 tbsp 0000 flour
- milk q.s.
- Vanilla essence
- Hileret Stevia sweetener (c/n)
- 1/2 Cdita of baking powder
Sugar-free pancake recipe
or sugar-free pancakes
- Place the egg in a bowl with a pinch of salt and beat.
- Add whole wheat flour and flour 0000 and mix well until you join. Add a splash of milk to beat easier.
- Add the vanilla essence and stevia; half a teaspoon is fine, but you can also experiment to see how much you prefer. Add the baking powder and mix vigorously.
- The mixture will be rather runny. We'll refrigerate it for half an hour. This step is important so the flour absorbs the liquid and thickens.
- In a nonstick pan with a little butter or oil spray, place about two tablespoons of the mixture. Brown on both sides and serve in a stack with sugar-free jam.
