Why I love the pea mattress
It's a hearty, healthy, and nutritious meal that's really quick to make. Perfect for when we don't have time to cook but still want to eat... And I also love it because pea soup is a classic at my mom's house...
Ingredients
For 2 portions
- 1/2 onion
- 1 piece of bell pepper
- 1 tomato
- 1 garlic clove
- 2 slices of bacon
- 400g of frozen peas
- 3 eggs
- 1 broth pill
- Salt, pepper and oil
Mattress of peas
This is done
- Heat the pan and sauté the bacon slices, cut into large pieces.
- Move the bacon to one side of the same pan, add oil and sauté the onion and pepper first, then the chopped garlic.
- Add the chopped tomato and stock cube when the onion is about a minute away from translucent (you know what I mean?). A couple of tablespoons of tomato puree wouldn't hurt either...
- Add the frozen peas and cook.
- Make small holes between the peas and add the eggs until cooked. Serve.
