Yields: 4 portions
Preparation time: 15 minutes
Ingredients
- 200 g of bib
- 1 egg yolk (optional: cured or fresh)
- 1 tablespoon of caps, well chopped
- 1 teaspoon of dijon mustard
- 1 Chalota or ½ purple onion, fine minced
- 1 teaspoon of extra virgin olive oil
- 1 pinch of freshly ground black pepper
- 1 Salsa Salsa Chorrito (Optional)
- 1 teaspoon of chopped chives (optional)
- Tostas or crispy bread, to accompany
How to make fuest tartar step by step
- Remove the leather from the fuel and chop with a knife, in small cubes. It can also be processed, but taking care to keep maintaining the texture.
- In a bowl, mix the furt with the shallot or onion, the capers, the mustard, the olive oil and the Worcestershire sauce. Add black pepper to taste, (no salt is needed, because the fuet already has enough)
- The yolk can be raw, above the Steak tartar tartar classic, or make a cured yolk (heal in soy sauce or on a mixture of salt and sugar, leaving it cold about 1 or 2 hours). It can also be mixed to integrate the ingredients.
