You can make them with toasted bread or store-bought toast, or even with some cute round crackers. They'll still be delicious.

- 1 cup polenta
- 1 eggplant
- 1 tomato
- 1 egg
- 1/2 cup of grated cheese
- Goat cheese roll (or Roquefort)
- Chopped ciboulette
- Salt, pepper and olive oil

1) Prepare the polenta as directed on the package. I make it with slightly less water so it's firmer.
2) Once the polenta is cooked, add the cheese . Let it cool.
3) Once cool (or lukewarm), add the egg and season with salt. Stir well.
4) On a hot griddle, place spoonfuls of polenta and flatten . They'll form small pancakes. When they're golden brown on one side, flip them over. They'll come off easily.
5) Eggplants : cut them into thick slices, moisten them on both sides with oil and grill them until golden brown on both sides.
6) Assemble the appetizer: Top each pancake with a slice of eggplant , a slice of tomato , and a little crumbled cheese chives .

I use them the same way you did here, except first I sauté garlic and a little green onion, then make the polenta over that. I make the discs and place them on a tray covered with plastic wrap and into the freezer! They're ready in case a hungry friend drops by!
