Paulina's recipe today is low in fat, easy to prepare since it doesn't require a machine, and is another of the healthy and delicious desserts she's accustomed us to.
This ice cream is just as delicious as sugary ice creams; it's just as delicious and much healthier. It's also an ideal dessert for children, for those on a diet, for those who want to eat healthier but can't stop indulging in these treats! No sugar is added to the recipe, just a little liquid stevia and the natural sugar from berries: blueberries and strawberries .
Plus, you won't need a machine to make this ice cream. Yes, ladies and gentlemen: Homemade ice cream without a machine! All you'll need is a mixer or hand blender, a little time to mix the ingredients, and then watch a movie while it cooks itself in the freezer. That's how I made it, and it turned out delicious. How to make sugar-free ice cream
Ingredients
- 1 pot of natural yogurt
- 1/2 pot of cream cheese
- 150 grams of strawberries
- 2 handfuls of blueberries
- 1 tbsp liquid stevia
- 2 tbsp sugar-free jam
Sugar-free ice cream in 8 steps, another healthy dessert from Paulina!
- Place the contents of a small pot of natural yogurt in a bowl. If you want to make it with flavored yogurt, you can also do it, but I prefer the natural flavor because it creates a homemade ice cream with a mild flavor .
- Add half of the contents of the cream cheese pot, and using a mixer or blender, beat until well combined and smooth.
- Sweeten with a tablespoon of liquid stevia and mix well again. The amount of sweetener is up to you. Since I prefer my ice cream not to be too sweet but rather sweetened by the fruit , I only add a tablespoon. If you want more, feel free to try it.
- In a saucepan over medium heat, heat the blueberries until the fruit releases its own sugar. You'll see a little steam escape; don't worry, this is normal; it should only do so for about 3-4 minutes. The fruit should be soft, as it will be the pulp for our homemade ice cream . - Clean the strawberry bunches, cut them in half, and blend them in a container suitable for mixing.
- Now we are going to add the strawberry paste and the blueberries to the yogurt and cheese cream that we prepared in step 1. We are going to mix until we obtain a thick preparation with the color of red berry ice cream .
- Finally, we need to place the mixture in the freezer for 30 minutes. Then, remove it, stir it, and repeat this process until the ice cream reaches the desired consistency. Stirring every 30 or 40 minutes prevents crystals or ice cubes from forming and ensures that our homemade, sugar-free ice cream is very similar to the ones you get at the ice cream parlor ! Repeat at least 5 times (then we can leave it in the freezer without stirring).
- Let it rest for a few minutes outside the freezer before consuming.
Dear Paulina, all your recipes are delicious, but the nutritionist told me that grinding fruit releases all its sugars, which triggers insulin production. Is there another way to avoid grinding it? Perhaps cooked.
