1: Energy balls
Ingredients
- 1/2 cup pitted dates
- 2 tbsp almonds
- 1 tbsp dulce de leche
- Grated coconut
Energy balls are like a snack for children, but they're super nutritious and healthy , as they contain dates and almonds, which are very healthy. To prepare this easy snack, follow these steps:
- Using a mixer or food processor, blend all the ingredients until a smooth paste is obtained.
- Form balls of the desired size and roll them in grated coconut.
- Store in a Tupperware or Ziploc bag in the refrigerator.
2: Frozen juices
Ingredients
- Natural fruit juice
- Bags of candied almonds
This meal has a double function: if we store the frozen juices in the same Tupperware or bag where we store a sandwich or other lunch, it will keep them nice and cool until lunchtime . Afterward, it will make a delicious juice to accompany lunch. Here's how we prepared these frozen natural juices:
- Fill the candied peanuts bags with natural fruit juice. You can use orange or grapefruit juice, or you can also use other fruits like peaches, strawberries, kiwi, etc. If you don't have candied peanuts bags, you can use a small jar. Note: the jar must be plastic and have a lid (so it can be transported as a lunch box).
- Place in the freezer for several hours until frozen.
3: Polentitas
Ingredients
- 1 cup quick polenta
- Grated cheese
- Grated carrot
- 2 eggs
This is a classic Anna recipe. They're delicious, and what we love most is that you can vary the vegetables to change the flavor. The grated carrots can be substituted with zucchini, eggplant, beets, or corn. For me, this is one of the best dishes on this list. Here's how to make it:
- Prepare 1 cup of quick polenta following the package instructions. It's super fast, taking only a couple of minutes.
- In a bowl, mix the polenta with the grated carrot (or whatever vegetable you've chosen), the cheese, and the 2 eggs. Stir until well combined and a paste forms.
- Place in muffin tins and bake at 200º until golden brown (this will take about 15-20 minutes).
4: Sticks with dips
Ingredients
- 1 can of chickpeas
- 1 cda of cream cheese
- Sesame paste
- Lemon zest and juice
- Carrot
In this dish, we can use the same trick as in the previous one and change one of the ingredients to vary the flavor of the dish : the chickpeas can be replaced with beans, lentils, peas, etc. Look how easy it is:
- We put all the ingredients in the mixer and blend until a paste forms. It's very similar to hummus, but smoother.
- Transfer the paste to a small jar with a lid.
- Add carrot sticks (or your child's favorite vegetable). Done! A super nutritious meal.
5: Popcorn with nuts
Ingredients
- Popcorn
- Nuts
- Prepare the popcorn by placing the popcorn in a nonstick pan (no need to add butter or oil). If you have one with a glass lid, it's easier since you'll be able to see when it's ready. If not, the rule is when it stops popping for more than 30 seconds!
- Place in a Tupperware container and mix with nuts: I used almonds, but you can also choose any you like best.
6: Frozen fruit
Ingredients
- Strawberries
- Blueberries
- Grapes
This simple trick involves freezing fruit the day before. This way, when your child takes their lunch to school, the fruit will stay fresh until lunchtime. Plus, it's delicious frozen!
7: Rolled Sandwich
Ingredients
- Sliced or milk bread
- Cooked ham
- Cheese
- Grated carrot
For these original sandwiches, you can also use any ingredients you like. They're very easy to prepare, and while they're still sandwiches, they're a novelty for kids . Try them!
- Using a rolling pin, stretch the bread slice well. This will simply make it more flexible and prevent the roll from falling apart.
- Add a slice of ham, a slice of cheese, and some grated carrot. Remember that you can vary these ingredients to your liking.
- Cut off the excess edges of both the cold cuts and the bread so that they are rectangular.
- Roll it up like a sushi , pressing it down firmly. I cut it into three pieces, but you can leave it whole.

Hi Paulina!!! My 7-year-old son eats at school. He goes, but he doesn't eat anything because he doesn't like what they serve him. I'd like to send him something like lunch. I looked at the 7 options you posted. Any other ideas? Thanks so much!
