This coconut and nut Buddine is Coquito's Buddine. I was going to say the 'favorite' of Coquito, but it would not be fair. Coquito's mother (that is, I) does not know how to do another Buddine, so it is simply the Coquito Buddine.

Ingredients

For a big pudding

  • 3 eggs
  • 2 cups of lift flour
  • 1 cup of sugar
  • 1 cup of neutral oil (sunflower or corn)
  • 1 cup of grated coconut
  • 1 cup of milk
  • 1 handful of nuts

  1. As always, turn on the oven and leave it by minimizing.
  2. Beat (by hand or with blender) the 3 eggs sugar cup .
  3. Add the first cup of flour and join well.
  4. oil cup to the preparation . Unite again until it is uniform.
  5. Once the above is united, add the coconut , the nuts and continue beating.
  6. Get the second cup of flour .
  7. Incorporate, finally, the cup of milk . Go putting it little by little, you may need a little less.
  8. Place the preparation in a Budinera and bring to a minimum oven, for an hour .

I just do it, I must say that it is very easy and the texture is incredible ... but I would like it to be a little sweeter ... I don't know if more sugar or a pinch of salt to highlight flavors. With dulce de leche is a pump.

Hello Paulina, thank you for your recipes, they are all great! This Buddine was delicious only that I disarm quite a lot, it will be that I put the entire cup of milk and perhaps it was not necessary? When cut into slices, it is disarmed.

It has a glorious pint. And I know that it bothers you a lot, but I would change a cup of wandering flour for an integral flour, and lower half a cup of oil (I would use a cup and a half of milk), so that there is a lighter touch. I would also use only half a cup of sugar (the other half would complete with Stevia powder). Yes, it is more light and surely it will not be so spongy and delicious, but the life of the fat "better if it is light" is so ...
