About this wet carrot cake
How about friends, do you like carrot cake ? I love it, it is my favorite cakes for flavor, color and texture. However, as I tell you in the video, grate carrots is without exaggeration, a real embole.
This damp carrot cake also known as carot cake I loved it because it prevents us from that step and the cake is spectacular. Quite different from the carrot cake that we usually see (which is more compact, more wet, less spongy and darker) but equally rich.

Ingredients
For a pastelote
- 3 Carrots
- 1 cup of sugar
- 4 eggs
- 1 cup of neutral oil (sunflower or corn)
- 2 cups of lift flour (or common flour + baking powder)
- Optional: raisins, nuts, grated coconut
For cheese frosting:
- 50g. of butter
- 50g. Impalpable sugar (Glass sugar)
- 100g. Filadelphia type cream cheese
- 1 cdita. vanilla essence
How to make wet carrot cake
That simple
- Place in the blender: the sugar, the carrots, the 4 eggs and the neutral oil. Liquefare until the carrots are completely crushed and all very well integrated.
- Pass this mixture to a bowl and add the two cups of flour, sifted. Mix with a spatula until no grumo is left. At this time we add the extras, if we put: grated coconut (one or 2 tbsp), grape raisins and/or nuts.
- Place everything in an oven mold, I like rectangular but it can also be round (by the way, my ceramic mold is from Lecuine). And bring to a preheated oven at 180º for 40-45 minutes.
- Remove and let cool before unmolding.
- Cheese frosting: simply beat the butter at room temperature with sugar and then add the cheese very cold. Continue beating until it is creamy (if you want to see this recipe in more detail, click here: cream cheese fosting)
- Cover the cake with Frosting. It is important that the cake has nothing temperature since the frosting carries butter and will not melt. And voila! There is already your carrot cake and without grateful one.
