To be honest, this is just the same pudding I always make, but with an orange twist. And so I'll tell you: orange pudding, coconut pudding , lemon pudding , tangerine pudding ... it's a versatile recipe that you can turn into anything you want.
If you follow the proportions, this orange pudding will be very orange pudding (that's how I like it), so if you want a milder orange pudding, use the juice and zest of one orange instead of two.
What else can I tell you about this orange pudding? It's one of my staple recipes. I make it so quickly and by eye that sometimes I buy fewer cookies at the supermarket and say, "I'll make some puddings."
If you need to make it to go, for a special date, or need to stock up for some reason, you can freeze the orange pudding once it's made and then take it out a couple of hours beforehand—it's perfect.

- 2 oranges
- 2 cups self-rising flour (or all-purpose flour + 2 tsp. baking powder)
- 1 cup of sugar
- 3 eggs
- 1 cup of neutral oil (sunflower or corn)
Orange pudding recipe

- Preheat the oven , as usual, to 180º. Don't forget, it's very important.
- Beat the eggs with the sugar until they are frothy and creamy.
- Add one of the cups of flour and stir until completely combined. This part, from here on, is done with a spatula or spoon, not a mixer. I tell you this as a matter of protocol because I usually end up doing everything with the mixer.
- Add the cup of oil and do the same: stir until combined.
- Add the peel and juice of the 2 oranges .
- Add the last cup of flour until combined and there are no lumps.
- Bake the orange pudding for 45 minutes or until golden brown on top.

Laura, yes, you can make it with bitter oranges. I made this recipe, but instead of oranges, I added lemon juice and zest. I marbled it and added glaze on top... spectacular.
