I already told you that my little one has a hard time eating basically anything that isn't made from flour. And I joined the Food Pluggers , that wonderful little group of Republican parents dedicated to developing methods to introduce healthy food to children.
Well, when you start food plugging, you're assigned a mentor. I can't tell you what the initiation ritual entails, but I can tell you that Stella was my mentor. Stella gave me countless recipes and advised me on how to get the kids started on healthy foods like these oatmeal cookies without complaining and having a good time.
When I mentioned that almost everything my son accepted contained flour and that this worried me a little, he said, "That's because you haven't given him flourless oatmeal cookies yet, my dear." No sooner said than done. The cookies are delicious, and Coqui devoured them.
Over time, I became friends with Stella, who talks a lot about God and has a son, Tobbey, a former no-good-anything kid. I'll keep telling you more food plugger stories...
Ingredients
for a good source of oatmeal cookies
- 30g of grated coconut
- 50g of oat bran
- 50g of sugar
- 1 egg
- 2 tbsp. rolled oats
- 3 drops of vanilla essence
- 1 pinch of salt
- 1/2 tsp. baking powder
- Half -lemon zest
Flourless Oatmeal Cookie Recipe
They are super rich and healthy
- Mix all the dry ingredients: coconut, oat bran, rolled oats, salt, sugar, baking powder, and lemon zest.
- Add the beaten egg with the drops of vanilla essence. This will give our oatmeal cookies a special aroma and flavor.
- Mix well, it will be a sticky dough.
- Place in the refrigerator for half an hour. This is protocol; I was hungry and didn't do it, but if you do, it's even better. It'll make the cookies easier to form.
- Form into balls and place them in a greased and floured baking dish.
- Bake in a medium oven for 10-15 minutes or until the edges are golden brown. It's important to remove them as soon as the edges turn golden brown, otherwise they'll burn underneath and you won't be able to see them. They may look soft when you remove them, but they harden as they cool. Ready! Your flourless oatmeal cookies are delicious and very healthy .

You have to be careful with the oven temperature for these flourless oatmeal cookies (or, in fact, for any cookie baking). Since they bake quickly, it's sometimes easy to screw up. If you set the oven too high, they'll burn on the bottom before golden brown on top. If you set the oven too low, they won't burn, but they may end up very dry when you take them out. I advise you to try a small batch of oatmeal cookies until you find the perfect temperature. As Descartes said, every oven is unique.
