I love recipes with chicken all, but this dish has something else. It ends up being a moderately simple dish, but at the same time it has the complexity of white wine and the taste and texture of the meat cooked in broth, which makes it an extremely special recipe. The missing step in the video
The missing step in the elaboration of this chicken to mustard is step 4 of the recipe. It's about putting the wine and letting it reduce until alcohol evaporates. If you look at the video, when I put the mustard it shows that I have already put the wine before, the texture of the background is different.
Ingredients for 2 portions
- 4 chicken dams
- 2 tbsp. of butter
- 1 oil splash
- 1 onion
- 1 CDA. of mustard
- 1 cdita. of mustard in grain (optional)
- 1 cdita. of strange
- 1 jet of white wine
- 2 cups of chicken broth
- Salt and pepper
Mostaza chicken recipe
- Put a thick background pan with 1 CDA. of butter and 1 splash of oil.
- Once it is hot, add the chicken dams, splashed, on the side of the skin. Brown over high heat, turning, until golden brown on both sides. Remove and book.
- Place on the same cooking bottom (don't wash the pan!) The chopped onion. Save it until it looks golden. If necessary, you can add a little more butter.
- Add the wine jet and let reduce a few minutes until alcohol evaporates. You will realize because it will stop out drunk smell.
- Add the tablespoon of mustard and remove to integrate. Incorporate mustard in grain (it can be crushed or not), the hardness, salt and pepper.
- Add the broth and remove. Put the chicken dam on the pot and cover. Leave over high heat until it boils.
- Once he boiled, uncover the pot (leave only a hole to make the steam out) and thus cook about 20 minutes.
- When it is ready, we turn off the fire and let it stand to settle, about 10 minutes. Ready! You already have your mustard chicken. You can accompany it with rice, mashed potatoes, or with the potatoes to the gratin cream that I did. I give you the recipe next week.
