Welcome to Paulina Cocina! Today's recipe is typical of Argentina and Uruguay. It's super quick to make and delicious. We're going to make revuelto gramajo , a dish that's spectacular and won't leave anyone's palate untouched!

Potatoes, eggs, and ham as a base, followed by a ton of other ingredients that vary depending on the family and the recipe... It works for all levels. Besides being super affordable, it's delicious and simple to make. Just a little patience and you're done .

We're all pretty clear on this channel that recipes with potatoes are above all others, and the revuelto gramajo isn't going to be left behind. When it comes to choosing recipes, there's no rational logic: Does it have potatoes? Okay. We make it. Why? Because it has potatoes, and here it's been made very clear more than once that she's the queen of love, and anything related to her is going to be good.

Who invented the revuelto gramajo?

This recipe for revuelto gramajo originated during the Viceroyalty of the Río de la Plata, and there are tons of versions that tell how it was invented. All versions agree that the person who invented it had the last name Gramajo ... AND YES. One version talks about a Horacio, another about Artemio, and another about Arturo. They're so entertaining, one even appears in a novel!

If you want, you can look them up. That way, I won't bore you with this. All the versions end with the idea of having all the ingredients pre-prepared so you can make scrambled eggs quickly and whenever you want. And I think it's a great idea.

You can prep the potatoes and chop things and have them in the fridge. And when you're exhausted from work, instead of spending your paycheck on delivery, you go to the kitchen, beat a couple of eggs, and voila! Your dinner is ready with the gramajo scramble.

It can be eaten as a plate or on bruschetta. Toast some homemade bread , add a drizzle of olive oil, and wow, how delicious! Below, I'll share the recipe for a classic revuelto gramajo . Below, I'll give you two variations of this same recipe: a gourmet revuelto gramajo (aiaa) and a vegan revuelto gramajo .

Traditional Gramajo Scrambled Eggs Recipe

Ingredients

  • ½ kg of potato
  • 1 medium onion
  • 1 small green onion
  • ½ bell pepper
  • 2 garlic cloves
  • 100 gr of cooked ham
  • 4 eggs
  • A handful of peas (optional)
  • Parsley
  • Salt
  • Pepper
  • Olive oil
  • Frying oil

How to make revuelto gramajo in 5 steps

  1. Cut the potatoes into thin strips and fry them. They should resemble potato pies. Set aside.
  2. Cut the onions and bell peppers into strips, finely chop the spring onion, and sauté in a pan with olive oil until the onion is translucent.
  3. Finely chop the garlic and slice the ham. Add to the previous mixture and season to taste.
  4. In a separate bowl, beat the eggs. Add to the mixture and mix well. Add the fried potatoes along with the peas and make a scramble.
  5. When serving, sprinkle with finely chopped parsley.

Variations of the Gramajo Scrambled Eggs

Variant 1: Gourmet gramajo scrambled eggs

What are we going to need?

  • 2 sweet potatoes
  • 1 CDA of sugar
  • 1 green onion
  • ¼ green bell pepper
  • 1 garlic
  • Smoked bacon (to taste)
  • 3 eggs
  • Salt and pepper
  • Frying oil

Gourmet gramajo scrambled eggs step by step

  1. Peel the sweet potatoes, fry them (just like the traditional gramajo scramble) and before setting aside, sprinkle with the tablespoon of sugar.
  2. Cut the bacon into strips and place in a pan without any oil. Once it loses a little fat, add the finely chopped onion, the finely chopped garlic, and the diced bell pepper. Sauté for a few minutes until the bell pepper is tender.
  3. In a separate bowl, beat the eggs and season with salt and pepper.
  4. Add the eggs to the sweet potato and make the scrambled eggs.
  5. When serving, sprinkle with finely chopped parsley on top.

Your scrambled eggs are ready, cheto gramajo!

Variation 2: vegan gramajo scramble

Ingredients

  • 3 potatoes
  • ½ red bell pepper
  • 1 medium onion
  • Mushrooms or portobellos to taste
  • Olives (optional)
  • Olive oil
  • 2 tbsp chickpea flour
  • 8 tbsp of water
  • Salt and pepper

How to make vegan gramajo scrambled eggs

  1. Cut and fry the potatoes just as we know. Set aside.
  2. Sauté the onion, julienned bell pepper, and olive oil. When the onion is translucent, add the quartered mushrooms and sauté a little longer.
  3. Season to taste.
  4. In a separate glass, mix the eight tablespoons of water with the two tablespoons of chickpea flour. Add to the mixture along with the previously fried potatoes.
  5. Make the scrambled eggs just like the traditional ones.

Parentheses ... To use chickpea flour as an egg substitute in any recipe, the ratio is one tablespoon of flour to four tablespoons of water. And if you don't have any, you can make the scrambled eggs without the flour, and it will still be delicious!
