A-do-ro the croquettes.
It seems to me a healthy, easy and fun way (?) To recycle food. They can be done in the oven, my children love, all happy with the croquettes.
In this case I bring you some vegetarian croquettes of broccoli and gorgonzola , which I made with some remains of mashed potatoes that were getting bored in the refrigerator.
They are delicious, soft but with the character of Gorgonzola cheese. The broccoli combines wonders with this cheese.
Gorgnozola cheese , you can make these vegetarian croquettes with blue cheese or roquefort, they will look very well the same.

Ingredients
For a beautiful source of croquettes
- 1 cup of potato puree
- 1 cup of boiled broccoli
- 1 piece of Gorgonzola cheese (or Roquefort, if applicable)
- 1 piece of fresh butter cheese
- 1 egg
- Breadcrumbs
- Sesame seeds
- Salt and pepper
- Oil
Vegetarian croquettes of broccoli and gorgonzola
They will see how easy
mash is not reused already made, make a firm potato puree (with little milk) and let cool.

6. Fry the croquettes in hot oil until golden brown. You can also do them in the oven, with little oil and turning them in the middle of the cooking.
