Yield : 10 tacos

Preparation time : 6 hours

Ingredients

  • 1 kg of beef for barbecue
  • 4 dried guajillos chiles
  • 2 dry wide chiles
  • 3 garlic cloves
  • 1 large onion, chopped
  • 2 bay leaves
  • 1 fresh thyme twig
  • 1 fresh oregano sprig
  • Salt to taste
  • Tortillas
  • Coriander and chopped onion
  • Lemons cut into segments

  1. Carefully break the guajillos and wide peppers, removing the seeds and internal veins. Soak them in hot water for 15 minutes to soften. 
  2. Licuate the chiles along with the garlic teeth, salt, and a little water until you get a paste.
  3. In a bowl place the beef and spread the paste of Chile well. Let marinate in the refrigerator 2 hours or all night.
  4. In a pot place the marinated meat together with the onion, bay leaves, thyme and oregano. Cover with water and cook the meat over very low heat to maintain a soft and constant boil, preventing the meat from cooking too fast and becoming hard. (approx 4-5 hs)
  5. Heat corn tortillas. Fill them with crumbled barbecue meat. Add coriander and chopped onion to taste. Serve with lemons to squeeze.
