  • 4 leeks
  • 1 onion
  • 2 potatoes (potatoes)
  • 1 liter of chicken (or vegetable) broth
  • 200 ml of cream
  • 2 tablespoons of olive oil or 1 tablespoon of butter
  • Salt and pepper to taste
  • Croutons (optional)

How to make cold leek cream Vichyssoise step by step

  1. Clean the leeks thoroughly and thinly slice the white part, along with the onion. Sauté in a saucepan with oil or butter over low heat until lightly browned. 
  2. Peel and dice the potatoes and add them to the pot. Cover with the broth, season with salt and pepper to taste, and cook until the potatoes are tender.
  3. Once everything is cooked, you can blend it in a blender or food processor until you get a smooth cream. If there are any lumps, you can strain it through a fine sieve. 
  4. Add the cream, mix and let it cool for 2 hours in the refrigerator before serving.
  5. Serve cold and decorate with croutons.
