Use the fennel leaves: pesto and a salad

The hairy pesto

The anisado flavor of fennel leaves is unmatched. This pesto is ideal to accompany fish, citrus (for example, an orange and onion salad) or as I did, avocado. Also pasta, it is clear. If you do it with mortar and not by machine the leafs do not break completely and remain as 'hairs', very colorful to decorate.

Ingredients

You have at home

  • 1 fennel leaves (without stems)
  • 1/2 garlic clove
  • 6-8 almonds
  • Olive oil
  • Salt and pepper

1. Wash the fennel leaves , the finite, without stems.

garlic , leaves , salt and pepper and crush on the mortar

3. Add the almonds and continue crushing.

4. Finally, add olive oil and crush until a uniform paste is with 'hairs'.

5. For avocado salad , simply mix the hairy pesto with the avocado cut in cubes. The pesto, like others, can be stored in a bottle in the refrigerator.
