For 2 portions of rice to Roquefort
- 1 glass of double rice (carnaroli, pump or double carolina)
- 1 piece of bacon of about 200g.
- 1 CDA. of butter
- 1 onion
- 1 jet of milk cream
- 50g. of Roquefort cheese
- 50g. of butter cheese (or other cheese that melts)
- Salt and pepper

- Cut the bacon into small pieces and brown it into the empty pan, with nothing, until it is crispy. We are not going to add oil or butter since the bacon dismisses its own fat and that is enough so it can brush and be very crispy. If they add something, it will be oily.
- Chop the onion into small pieces and add it to the pot with a bacon. Now if we are going to incorporate a tablespoon of butter. Save over low heat until it is transparent.
- Once the onion is transparent, add the rice and remove with a wooden spoon, always on the fire, until the grains look transparent and bright. If we can add more butter or oil, the important thing is that the rice is very transparent before adding the water.
- Then add the water. We will put 3 glasses of water instead of two, since we want in the end a very well and caldous preparation.
- Cook the rice the first 5 minutes covered, always over medium heat. Then uncover and stir as long as we continue cooking.
- Once the rice is ready to add the two types of cheese and cover for 5 minutes.
- After these 5 minutes, add the cream and stir hard, unite everything. Serve.
