About Milk Gelatin

Milk gelatin is a common dessert, especially in Latin America. In Mexico, it has been so successful and popular that it is now a part of Mexican culinary tradition .

  • In Mexico, milk gelatin is often enjoyed as a dessert or even a common sweet for parties and celebrations .

Its bright white appearance makes this dessert a visually appealing option, ideal for presenting in different colors and shapes, for any occasion.

In addition, Mexican milk gelatin is a preparation that gives free rein to the creativity of adults and children, since it can be decorated with fruits, sauces or even with pieces of other fruit gelatins inside , similar to mosaic gelatin .

Key Ingredients: What is Milk Gelatin Made of?

Mexican milk gelatin is made primarily from milk, unflavored gelatin, sugar , and cinnamon or vanilla . The milk provides the milky, creamy , while the powdered gelatin gives it its firm, gelatinous consistency.

  • This culinary creation combines the best of both worlds: the freshness of milk and the gelatinous consistency that makes it so special.

Sugar is added to sweeten the dessert, and vanilla or cinnamon gives it a delicious, aromatic touch.

Gelatin Preparation: Can milk be used instead of water?

For those unfamiliar with this dessert, you'll probably wonder if you can use milk instead of water to make gelatin. The answer is yes, and the result is a creamier gelatin with a more pronounced flavor.

However, it's important to note that gelatin may take a little longer to solidify (set) when using milk, due to its fat content. Therefore, if you use milk instead of water, it may take longer to enjoy the final result.

Gelatin setting time with milk

The setting time for white gelatin can vary depending on the recipe and refrigeration conditions. It's generally recommended to refrigerate milk gelatin for at least 3 hours , although it may need more time depending on the quantity and the temperature of the refrigerator.

To ensure the gelatin has set properly, you can check by gently pressing the surface with your finger. If the gelatin remains firm and doesn't sink, it's ready.

4 Tips for preparing Mexican milk gelatin

  1. Make sure to completely dissolve the powdered gelatin in cold water before adding it to the hot milk. This will prevent lumps from forming in the final gelatin.
  2. To add a touch of color and flavor, you can stir fresh or canned fruit into the milk gelatin before refrigerating it. Fruit can be cut into small pieces or pureed for a more uniform texture.
  3. To unmold the milk gelatin , submerge the mold in hot water for a few seconds before turning it upside down onto a plate.
  4. For a more attractive presentation , you can serve the milk gelatin with fruit sauce, a touch of caramel or a chocolate sauce .

Variations and flavor touches for your Milk Gelatin

  • Fruits: Pieces of fresh fruit such as strawberries, kiwis, mangoes, peaches, bananas or any other fruit can be added to the inside of the gelatin, once it is at room temperature before refrigeration.
  • Fruit Sauces: Prepare a homemade fruit sauce , such as strawberry, raspberry, or mango, and gently stir it into the gelatin before it solidifies. This will add color and flavor to the gelatin.
  • Chocolate: Chocolate chips can be added to the mixture to create a milk chocolate-flavored gelatin.
  • Caramel: A little bit of liquid caramel or dulce de leche on top, for a sweet and sticky touch.
  • Yogurt: For a creamier flavor, you can mix a little yogurt with the milk gelatin to obtain a smoother and different texture.
  • Condensed milk: You can use one part condensed milk and one part regular milk for a thicker, sweeter gelatin.
  • Citrus zest: A touch of lemon or orange zest, or both, can add freshness, flavor, and color to the dessert.

Milk gelatin recipe

Yield : 4 portions

Preparation time : 10 minutes.

Cooling time : 3 hours (at least)

Ingredients

  • 1 envelope of unflavored gelatin (7 g according to package instructions)
  • 1/4 cup cold water to dissolve the gelatin
  • 2 cups of milk
  • 1/2 cup of sugar
  • 1 teaspoon vanilla extract or 1 vanilla pod (or 1 cinnamon stick or 1/2 teaspoon ground cinnamon)
  • (Optional) Pieces of fruit jelly, fruit or other ingredients of your choice

How to make milk gelatin step by step:

  1. In a small bowl, dissolve the unflavored gelatin in 1/4 cup of cold water. Let it sit for a few minutes until it thickens.
  2. Heat the milk in a saucepan over medium heat and add the sugar. If using a vanilla pod, cut it lengthwise, scrape the seeds into the milk, and add the pod. If using a cinnamon stick, add it to the milk. Stir constantly until the sugar is completely dissolved (about 5 minutes). Remove the vanilla pod or cinnamon stick before continuing.
  3. Remove the milk from the heat and add the dissolved gelatin. Mix well until completely combined. Let the mixture cool to room temperature, but do not let it solidify. If desired, add fruit gelatin pieces, fruit, or other ingredients at this point.
  4. Pour the mixture into individual molds or a large mold. Refrigerate for at least 3 hours or until the gelatin has completely solidified.
  5. To unmold, run a thin knife around the edges of the mold or briefly dip it in hot water. Serve the gelatin cold.
