Ingredients

  • 200 gr of desalted cod
  • 3 medium potatoes
  • 2 oranges
  • 1 small onion
  • green olives 
  • Extra virgin olive oil
  • White wine vinegar
  • Salt to taste
  • Fresh parsley leaves 

How to make a Malaga cod and orange salad

  1. Peel the potatoes and cut them into small cubes. Cook in a pot with water and a pinch of salt until tender. Drain and let cool.
  2. Break the desalted cod into small pieces, making sure to remove any remaining bones. If the cod still tastes too salty, rinse lightly with cold water and drain.
