What's up, friends of Paulina Cocina? The title is no joke. This flaxseed bread, besides being gluten-free and flourless, is also a bread that helps you lose weight. We got the recipe from María Martinez , a website with recipes for protein diets, and we found it so appealing that we decided to try it.

About this gluten-free bread: flaxseed bread
It's not a joke, guys. This flaxseed bread exists and is among us. A few clarifications:
- Ideal, ideal, ideal if you can't eat flour (like gluten-free bread), or if you simply want to eat bread without gaining weight. Or if you're on a diet.
- Buuuut, just know that it DOESN'T taste like normal bread. That would be impossible; it's a gluten-free bread: it doesn't have flour, it's not a yeast dough, etc. It has a different flavor, which isn't bad.
- I liked eating it most on toast. I think freezing it in slices and eating one every morning is great, because it's a very healthy bread. I even alternate it with a slice of regular bread.
- Why it helps you lose weight: Because flaxseed fiber is soluble, it has a kind of fat-burning effect, trapping sugars and fats, blocking them and preventing their absorption. I'm obviously repeating myself like a parrot because I don't understand anything about this topic, but the site where I got the recipe is a reliable one in this regard.
- Regarding the type of flax: The original recipe recommended using golden flax (like brown, but in the color… guess what… gold). I couldn't find any anywhere and decided to try brown, despite the warning that it would be bitter. Well, my flax bread didn't turn out bitter at all with the brown flax (that's why I'm posting it), so go ahead and use whatever type of flax you like best.
- Idea: I haven't tried it, but it's possible that this flourless bread could also be made with chia seeds, since chia reacts the same way as flax when in contact with liquids. If you try it, be sure to let me know in the comments or on one of my social media channels.
- Flaxseed bread prepared this way is not only flourless but also 100% fiber. This means it's ideal for people who need to improve their digestive function or those with constipation, like you.
Ingredients
for 1 small gluten-free loaf (double the quantities for a normal-sized loaf of bread)
- 5 tbsp. flax seeds
- 5 egg whites
- 2 tsp. baking powder
- 1/2 tsp. fruit salt
- 1 pinch of salt
Gluten-free bread recipe: flaxseed bread, flourless bread
That's how easy it is
- Grind the 5 tablespoons of flax seeds with a blender or food processor. You can also use ground flax seeds, which you can buy at supermarkets.
- Add a pinch of salt, the baking powder, and the fruit salt. Mix well.
- Add this flaxseed mixture to the egg whites, already separated from the yolks. Mix well. It's important to stir for about 2-3 minutes so that the flaxseed begins to react upon contact with the liquid in the egg whites.
- Place the mixture in a baking dish. If you're using a traditional oven, it takes about 15-20 minutes at 180°C. As I explain in the video, I made the gluten-free bread in an Air Fryer , which cooks with a stream of hot air. If you have one, the cooking times are: 10 minutes at 160°C, then 8 minutes at 180°C.
- Once you take it out, wait until it's warm and unmold it. And that's it! You have your homemade gluten-free bread.

I made it, and when it was hot, it had a very unpleasant smell, like fish. Then I left it overnight, and the next day the smell disappeared. It wasn't very tasty, but I suppose if you do it right, it can be delicious. Mine came out really compact and low.
