Welcome back to Paulina Cocina, friends! Today we're going to try two stuffed bread recipes that are viral on the internet and are delicious!
The first recipe is pizza balls, which are a kind of stuffed bread, or fritters. And the second recipe is a roll made with the same dough that also ends up being a kind of stuffed bread.

About these stuffed bread recipes
These two stuffed bread recipes have been circulating on the internet for a while now and are already quite popular, and often these recipes don't get us anywhere. These viral recipes usually lie to you; we've talked about this a million times. You can watch all of Paulina's YouTube videos debunking them! But don't worry. These recipes are guaranteed to turn out just fine. There's no chance they'll fail us.
The videos we reference use store-bought dough, but we're going to use the dough we learned in the first episode of the series, which, in my opinion, is the best dough for making stuffed bread . Anyway, I'm rewriting it in case you're too lazy to find the previous post...

for the yeast sponge
- 1/2 glass of milk
- 1 CDA of sugar
- 2 tbsp
- 30 g of fresh yeast (or 12 g of dry yeast)
For the dough
- 1 kg of 0000 flour
- 550 ml of water
- 1 CDA of salt
- Olive oil
For the stuffed bread roll
- 1 eggplant
- 3 slices of ham
- Cheese to taste
- Marinade: butter, garlic, oregano, salt and pepper.
For the stuffed bread
- Bacon or pancetta
- Salami
- Mozzarella
- Sauce: tomato, salt, oregano, pepper, garlic, olive oil
- Marinade: butter, garlic, oregano, salt and pepper
How to make stuffed bread step by step
How to make the base dough for bread
- Make the yeast foam as usual: mix the yeast, sugar, and two tablespoons of flour with the warm milk. Cover with a cloth and let the yeast sit and foam form. About 15 minutes.
- Meanwhile, prepare the rest: Place the flour in a bowl and make a well in the middle. Sprinkle the salt over the flour, and add olive oil to the well. Once the yeast foams, add it and the warm water little by little. Form the dough until smooth. The amount of water is relative; this amount is what was used in this recipe, but you may use a little less or a little more. You'll have to see how you do it.
- Once the dough is ready, cover it with a towel and let it rise for the first time. Once it's ready, deflate it, and it's ready to use!
Stuffed bread roll
- On an oiled baking sheet, roll out a piece of dough (you should end up with a rectangle that covers the entire baking sheet; the size of dough you use is up to you). Roll out, let rest for 10 minutes, and roll out again.
- The filling is up to you: for this recipe we used a sliced and grilled eggplant, but you can fill it with whatever you like best!
- Once the dough rectangle is well stretched out on the baking sheet, spread a little cheese over the entire surface. Not too much, but keep in mind: you'll need to continue adding cheese, so put a little on the first roll. Distribute the slices of ham on top, then a little more cheese on top. Add the grilled eggplant slices and add another little bit of cheese.
- Roll the dough like a Swiss roll and seal the ends tightly to prevent the cheese from escaping.
- Marinade: Melt a little butter and add spices and herbs to taste. Another option is to add chopped garlic, oregano, salt, and pepper. Simple but delicious!
- Brush the entire filled bread roll with the marinade and bake in a preheated medium-high oven until golden brown. Done!
Stuffed bread bombs
- Cut what we are going to use as filling into small squares.
- Sauce : Mix the diced tomatoes with the garlic and oregano. Season to taste with salt and pepper. Add a drizzle of olive oil for flavor.
- To assemble the stuffed bread, take small pieces of dough, stretch it with your hand, and add a spoonful of sauce and a little of the filling. In this case: one with a square of bacon wrapped around mozzarella, and another with finely chopped salami and mozzarella.
- Seal tightly like any other bread roll. Place on an oiled baking sheet and brush with the marinade, as per the previous recipe.
- Bake in a preheated medium/high oven until the stuffed bread is golden brown.
