This beet soup is a mixture between the typical Eastern Europe and the Andalusian Gazpacho. It is fresh and super nutritious rich, I recommend it for those hot days in which you never know what to eat.
In addition to freshness and ingredients, I tell you that I adore cold soups. They seem to me a finding (they came into my life a couple of years ago) and the easiest way to be well fed, light and fresh in summer. I prepare them in general as a first course before another fresh meal or as a single dish at dinner, because I don't like to lie with my belly full.

Ingredients

- 2 beets
- 1 celery branch
- 1 small carrot
- 1 tomato
- 1 piece of green bell
- A half clove
- 1/4 onion
- 2 pancitos
- salt
- pepper
- 4 tablespoons of vinegar
- 1 good stream of olive oil

- Boil beets peeled with celery and carrot until they are very soft. If you like garlic, you can add some peeled teeth in this step, they are very good and give it an original flavor. The same if you want to add any other vegetables to choice.
- Liquefare until it is well lyso and let cool. For this they will need a processor or mixer. The texture is comfortable, I like it to be fully processed.
- Once the first mixture is cold to add the other ingredients in the blender (the tomato is peeled) and the bread can go with cortex but better without. Also if they wanted to replace bread with a little oatmeal.
- Crush again until there is a super super smooth mixture.
- Take back to the refrigerator until it cools completely. It takes ice cream. At the top you can put raw ham taquitos, croutons, a jet of cream or yogurt, etc. I like to serve him with an ice. Is ready !!!
