We said (I said) back then that certain recipes allowed us to make facha with minimal effort, even knowing little to nothing about cooking.
I'm not making all this up, eh? In my country, there's the CNRH (National Commission on Prescriptions).
The CNRH has extensive documents detailing why one prescription is worthy of being filled and another is not.
Here I transcribe a paragraph from the latest Official Gazette, which is relevant for this avocado cream recipe that I bring you today:
“One of the keys to getting started is finding a recipe that isn't very common on the table, but whose flavor is familiar to the palate. Cold soups are a perfect fit in this case. They're not very common on our table, but we can find ways to make them with foods that are very popular, like avocado.”
(…)
"It's important that the recipe be crowned with some kind of pretentious . For example, with a crunch of such and such, with a crunch of such and such, with a mousse of such and such, with a foam of such and such."
These wise paragraphs from the newsletter inspired me to make this cold avocado cream with sweet potato crisps . At least in theory, it can't go wrong. No one can stop thinking you're a true gourmet after this avocado cream. No one will doubt that you have special skills in the kitchen. Skills that, I remind you, neither you nor I possess.
Ingredients
4 servings
3 avocados
1 celery stem
1 lemon juice
2 glasses of vegetable broth (or 2 glasses of water + 1/2 vegetable broth)
Recipe for avocado cream with crispy sweet potatoes
you'll see how complex everything is...
1. For the crispy topping: Slice the paille sweet potatoes (very thinly) and fry them in oil. Be careful! The sweet potatoes should be fried very quickly. Remove them from the pan as soon as they are golden brown, as they burn very quickly (see Potato Recipes: 6 Tricks for Making Paille Potatoes ).
avocados (peeled, of course, and pitted), lemon , celery , broth , salt , pepper , and olive oil in a blender . Add 3-4 ice cubes. Blend until smooth. Plate as shown. Enjoy!
This is how avocado cream with crispy sweet potatoes looks like.
KEH?!
Great!
Now that I see your photo... I'm missing that green you sprinkled. What's that?
(The color came out wrong in my photo, but it looked great.)
Are all your meals vegetarian?
Hello, where is it called Palta? I'd like to know, because of the culture. Here in Mexico, we call it avocado. Regards.
Hi Paulina, can this avocado cream be eaten warm or hot? Or is the avocado not cooked?
