Today we're going to learn a twist on the traditional pie. To surprise family and friends, Paulina teaches us how to make it with sweet potato and pork. In some places, it's known as pastel boniato. I can assure you, you won't regret trying it; the result is incredible.

Ingredients
sweet potato and pork, for sure
- 500 g of pork
- 50g of pancetta / bacon
- 2 small onions
- 1 garlic clove
- 1 piece of bell
- 1 splash of balsamic vinegar
- 2 large sweet potatoes
- 1 pinch of cinnamon
- 1/2 Cdita. of turmeric
- 1 stalk of green onion
- 1 CDA. of butter
- Oil, salt and pepper
How to make sweet potato pie
step by step
- Cut the pork and belly into small pieces. I like the belly chopped very finely, while the pork is cut into slightly larger pieces, as if it were for a knife-cut empanada.
- In an empty pot (without oil), we put the bacon over medium-high heat so that it browns in its own fat and becomes very crispy.
- When the belly is browned, add the pork and seal it well. You'll see some juice coming out, so wait for that juice to evaporate and then wait for the meat to be well sealed.
- Meanwhile, peel the sweet potatoes and cut them into chunks. Boil them with a little salt. The chunks can be any size, but it's important that they're all the same size so they all cook at the same time.
- Chop a garlic clove, two onions, and a bell pepper, and once the pork and bacon are well browned, add these vegetables to the pot along with a drizzle of olive oil, salt, pepper, and a splash of balsamic vinegar.
- Add half a glass of water and cover the pot, cooking over low heat until the preparation is well cooked and has the consistency we like for a cake.
- When the sweet potatoes are cooked, we drain them and mash them while they are hot, adding butter, salt and pepper. For those who are brave, you can add a little cinnamon and turmeric, which is delicious.
- Chop the green onion and add it to the puree, stirring.
- Now that everything is cooked, we assemble the pie. To do this, we first put a thin layer of mashed potatoes on the bottom, then add the pork mixture, and then another layer of mashed potatoes on top. You can add a little sugar and grated cheese on top.
- Bake for a few minutes until golden brown and serve!
