I love this soup! It has a very mild flavor, and the coconut-pumpkin-curry combination is brilliant. The coconut combination may seem strange, but keep in mind that coconut milk has a much milder flavor than the coconut we're used to, for example, in sweet dishes. Go ahead and try it! It's worth it.
where to get coconut milk
Coconut milk for this pumpkin soup can be found in health food stores and Asian food stores. It's widely used in Chinese and Thai dishes, but also in Caribbean and African cuisine. In my country (Argentina), it's relatively expensive. Ingredients
For 3 portions
- 1/2 Pumpkin
- 1/2 leek (or a small one)
- 1 glass of coconut milk
- 1 glass of water
- Olive oil
- Thyme
- Nutmeg (1 pinch)
- Curry (another pinch)
- Salt and pepper
Pumpkin and coconut cream soup recipe

1) Place the pumpkin, cut into chunks and the chopped leek, in a pot with a drizzle of olive oil. Sauté until the pumpkin is semi-soft.
2) Stir in the coconut milk (it will soften with heat) and water. Add the seasonings as well. Don't overdo the curry. Cover and cook for 10 minutes.
3) Once warm, blend in a blender or food processor until smooth. If you want a thinner consistency, add water.
4) To serve, you can drizzle with a little grated coconut. That's it! You've got your cream of pumpkin and coconut soup.
At the table... how wonderful! I thought it would have a strange flavor, but it didn't. I made it just like Paulina told me, and it was exquisite. I'll definitely add it to the menu. Grandma, how about I play a little sitar for you when we're done? Hare Rama.

Thanks Paulina!! I was craving some soup, but I'm terrible at cooking (your video on how to boil water is very helpful for me, haha). I found this one and wanted to try it. I made it with a Chilean twist, though; I made it with squash and scallions. I'm not exactly Krishna, so I used regular milk. The curry really gave it a nice touch; it was delicious.
