I could never explain well why, but that happened: one day, I sat in front of a chicken dish and I didn't want it . Nor could I cook meals with chicken. I was rejected by manipulating the meat.

First of all, obvious, I consulted with my psychoanalyst .

Because I heard this story "my body does not want such a thing" in the mouth of vegetarians . And since I always go bothering the vegetarians, well, I thought it was a kind of unconscious autocastigo for so much nonsense.

My psychoanalyst told me to stop fucking. Let's talk about my mother. I left .

I continued without trying meals with chicken a long time . Years, I would say.

Until I had a unveiling .

The bell of my house sounded. He opened the door and, stopped, a chicken. The chicken looked me in the eye and said: you are not you, it is me .

I took the dream to the psychoanalyst and said: we will leave here .

The thing is that my dream was repeated. Again the bell, the door, the chicken , serious: you are not you, it is me.

It occurred to me to call Pablo, Pablo El Pollero , one that brings you farm chickens to your house, organic .

I told Pablo everything : I couldn't try meals with chicken and my dream with chicken.

Ingredients

For 4 portions

For crumble:

  • 300g. of flour
  • 200g. of butter
  • 3 tbsp. of grated Parmesan cheese
  • 2 tbsp. breadcrumbs
  • 1 cdita. salt

 

For chicken:

  • 2 and 1/2 supreme (leg and thigh, boneless)*
  • 10 small portobelos fungi
  • 1 large onion
  • 4 Echalotes
  • Fresh herbs: mint, rosemary and oregano
  • 1 Good Balsamic Aceto
  • 1 cup of chicken broth
  • 1 cup fresh blueberry (optional)

 

 

*note

While the recipe can be done with another part of the chicken, I recommend using leg and thigh and not breast. At chicken meals you have to be careful since the greatest risk is for chicken to dry. This crumble has double cooking: the first and then goes to the oven to brown, so using leg and thigh we make sure the chicken is juicy.

 

About blueberries in this meal

Don't be bored Marta, put the blueberries. They give it a special touch that combines perfect. It does not convert food into sweet, blueberries are slightly acidic and it is a beautiful surprise when one reaches the end of the crumble. Encourage!

1. Do the crumble: place the flour , the parmesan , the breadcrumbs and the salt . Mingle.

2. Add the butter very cold and diced. Mix with your hands, trying to touch as little as possible not to transmit heat. There will be a kind of wet sand. Reserve in the refrigerator until using. This is what will make it crispy.

3. Cut the chicken into small pieces, 2 × 2 approx. The measure is important, since we want us to stay well cooked, but without being dry. If we cut it smaller, it may dry. If we cut it bigger, it may be raw.

4. Seal the chicken quickly in hot olive oil Remove and not wash the pot.

5. In this cooking fund, we add, if necessary, a little more olive oil and brown the onion and the echalotes . The well chopped throttle. The onion in large pieces.

6. Add the portobellos cut in rooms, cook only a couple of minutes, until they lose the consistency when they are raw.

10. Assemble the chicken crumble Place a handful of blueberries in the background, a few just. On these, place the chicken with a little of your juice. The juice should not reach up. Place a beautiful amount of crumble, without crushing, well shredded.

11. Bring to a oven (or better, gratin) for a few minutes, until the top looks golden.
