Summer recipes: cold pasta with avocado sauce
Ingredients
for 2 large servings
- 200g of pasta
- 2 avocados
- 1 lemon juice
- 1/2 glass of olive oil
- 1/2 garlic clove
- 1 sprig of cilantro
- 1 tomato
- Salt and pepper
How to make cold pasta with avocado sauce: it's that easy
- Cook the pasta as usual (you can use fresh pasta, like I did in the PastaMaker , or dried pasta). Strain and let it cool.
- Place all the ingredients (except the tomato) in the blender: the peeled and pitted avocados, lemon juice, olive oil, garlic, cilantro, salt, and pepper. Reserve a little cilantro for garnish.
- Blend until you get a thick sauce. If you need more liquid, you can add more lemon, broth, a little vinegar, or water.
- Place a little sauce in a bowl and stir the warm pasta in it until it is well coated.
- Serve, add more sauce, chopped tomato, and cilantro. And voilà! Here's one of the summer recipes to add to your cold menu.
