Ingredients

For about 6 portions

  • 8 clear
  • 240g. sugar,
  • 1 CDA. of maicena
  • 1 cdita, baking powder.
  • CANDY:
  • 4 tbsp. sugar
  • 2 CDA. water
  • Sambayón
  • 8 yolks
  • 8 tbsp. of sugar
  • 8 tbsp. of Porto or Cointreau or orange juice.

Floating Island Recipe

in microwave and suitable celiac!

  1. Separate the whites and yolks into two different bags.
  2. Add the sambayon sugar to the yolks and beat with blender 1 minute approximately, until the mixture is bleached.
  3. When with the desired consistency, add the port or orange juice. Take 1 minute to the microwave at maximum power. Remove and beat again. Take another minute to the microwave and beat again until a couple of couple consistency is.
  4. Now we go to the caramel: in a bowl suitable for Mircoondas place the sugar and water, and take 1 minute to the microwave at maximum power.
  5. Remove, move the bowl a little and bring another minute to the microwave until golden brown. Eye! With the candy, it comes out very hot and burns a lot, so nothing to put your finger to see if it is.
  6. Let's go for the floating island! Beat the snow clarify. When they are very firm add sugar in the form of rain and little by little. Add the baking powder and continue beating.
  7. Dump the meringue to the bowl with the caramel and take it to the microwave for approximately 2.5 minutes. Each minute open the door and control that it does not overflow.
  8. Unmold and serve on the sambayón (hence the floating!)
